Especially here in the Tennengau region of Salzburg, the locals have an absolute passion for cheese, highlighted by their full-flavored Tennengauer AlmKäse. The cheese dairies and mountain huts make their dairy products for the most part from organic milk produced by hay-fed cows. Which is the reason the cheese tastes so good. When animals graze in the Tennengau region, they only eat the very best food. Fresh and dried grasses as well as wild herbs give their milk, known as “hay milk”, its intensive flavor. And this, in turn, is the secret behind full-flavored Tennengauer AlmKäse. Furthermore, the milk contains valuable minerals and vitamins, because it is neither boiled nor pasteurized. Tennengau cheese producers mainly use first-class hay milk for their cheese creations.
