Cheese making looks back on a long tradition going back countless generations here in the Tennengau region of Salzburg. The cheese dairies and mountain huts make their dairy products for the most part from organic milk produced by hay-fed cows. Which is the reason the cheese tastes so good. Numerous inns and producers are also happy to welcome curious guests behind the scenes. And whether you prefer to buy items right there at the farm where they are produced or even lend a hand personally, you will always be welcomed with open arms and a big smile!
The secret of good flavor: organic milk
When animals graze in the Tennengau region, they only eat the very best food. Fresh and dried grasses as well as wild herbs give their milk, known as “hay milk”, its intensive flavor. And this, in turn, is the secret behind full-flavored Tennengauer AlmKäse. Furthermore, the milk contains valuable minerals and vitamins, because it is neither boiled nor pasteurized. Tennengau cheese producers mainly use first-class hay milk for their cheese creations.
