Martinigansl – Gans was Gutes

Martinigansl beim Hohlwegwirt in Hallein Taxach

Heute sind wir beim Wirt Ernst Kronreif und seiner Frau Biljana und schauen ihnen über die Schulter beim Gansl braten.

Hier die Anleitung von Ernst:

Man braucht eine junge, nicht zu fette Gans mit ca. 2,5 kg bis 3.5 kg. Größe hängt davon ab wie viele Personen daran essen sollen.  Das Ofenrohr schalte man auf 250° ein. Während das Rohr heiß wird füllt man die Gans mit Äpfel, Orangen, Majoran, Origano, Salz und Pfeffer.  Dann in einem vorgefetteten Bräter ca. 30 Minuten bei voller Hitze im Rohr braten lassen. Weiters auf 200 ° reduzieren und weitere 2 Stunden im Rohr lassen. Zwischendurch mit etwas Rotwein übergießen. Nachher rausnehmen. Flüssiges Fett abziehen, gibt ein herrliches Gänseschmalz. Während des Zerlegens der Gans noch im Bräter die Soße mit Cointreau oder Grand Marnier abschmecken. Als Beilage serviert man Blaukraut, Linsen und Servietten- oder Erdapfelknödel.
