One basic element of delicious AlmKäse cheese is provided by Mother Nature: so-called "hay milk". In other words, milk produced by cattle who spend the summer grazing on grass and herbs growing on hillsides at elevations between 500 and 1300 meters. Grass which is then turned into hay, for the cows to continue munching on during winter months in the valley below.
